Course overview
This course will introduce nutritional guidelines for the general population, and introduce the core components of healthy, sustainable and equitable food systems. Indigenous food knowledge will be explored. Students will develop a basic understanding of food safety. Scientific, professional and lay communication, both written and verbal: from sourcing information using credible resources, reading and critical analysis of the literature, to delivering the knowledge in an appropriate format, will be developed. This course aligns with the program intent to begin the foundational development of evidence-based knowledge needed to develop and critique nutritional advice and interventions designed to improve health and athletic performance.

Course learning outcomes
- Describe nutritional and dietary guidelines as they relate to healthy and sustainable dietary practices.
- Interpret information about food, diet, and nutrition to assess its accuracy, reliability, and relevance.
- Describe the food system in relation to their impacts on health, the natural environment and equity.
- Describe the role of traditional food cultures in shaping dietary practices and food systems across diverse communities.
- Explain the role of food safety and how it contributes to health, sustainability and food security.
