Recipe of the week - Poke bowl

This is one dish that I think works great, especially in lock down. It’s versatile and relies on both fresh ingredients and canned and long life ingredients. It can also fit any diet or dietary requirements. Vegan, pescatarian, vegetarian, gluten free. Whatever, you like.

The Base

First you have to start with a base, this can be pretty much anything that you think works, such as;

  • Brown rice
  • Basmati rice
  • Quinoa
  • Soba noodles
  • Or pretty much any noodle or rice

Simply cook it and build your bowl up.

Toppings

Next come the toppings. These can be as wild and colourful as your imagination (and your palate) permit. Some great fresh toppings could be;

  • Lettuce
  • Spinach
  • Cauliflower
  • Pumpkin
  • Avocado

Additionally, given the lockdown, some great canned and frozen options include;

  • Canned beans
  • Frozen corn
  • Other frozen vegetables
  • Canned chickpeas

Protein

You also have your choice of protein on a poke bowl. This can suit all dietary requirements and add a great texture and flavour.

  • Tofu
  • Tinned or Fresh seafood
Dressing

Finally, you have the dressing. This can come from a mix of flavours that suit your topping. Some great flavours I’ve found are;

  • Japanese mayonnaise
  • Japanese soy sauce
  • Soy sauce
  • Lemon
  • Sesame seeds and oil
  • Ginger
  • Coriander and other herbs
