Quick meal ideas

So, you have a long day of classes (or work) ahead of you. You don’t want to go all Wolfgang Puck in the kitchen at 8am because you have to run for the bus soon, but you also don’t want to burn a hole through your wallet for dining out – I feel you. 

What can you do? You have to eat to keep those brain juices flowing. So, we prepare our own meals. Nothing fancy and elaborate, but still tasty and filling. 

Here are a couple of my favourite quick and easy meals for uni.

Chicken sando

You’ll need:

  • Roast chicken leg from the supermarket (the quarter ones should do)
  • Spring onions 
  • Any type of bread (I prefer those $0.80 rolls from Coles)
  • Mayonnaise 
  • Salt
  • Ground black pepper
  • Anything more you feel like adding to your sandwich but the first four are the basics.

What to do:

  1. In a bowl, shred your roast chicken. You can keep the skin in (I do that for some texture) or you can throw it out. 
  2. Chop a stalk of spring onions and place them into the bowl with your roast chicken. 
  3. Add some mayo – make sure it’s enough so your sandwich isn't dry. 
  4. Add some salt and pepper to taste and mix them all up. 
  5. Once it’s mixed, spread them onto the roll. 

Chocolate French toast 

You’ll need:

  • Two slices of bread 
  • Two eggs
  • Ground cinnamon (optional)
  • Chocolate spread

What to do:

  1. Crack the eggs into a bowl. 
  2. If you have some ground cinnamon, add a dash of it. It’s fine if you don’t add them in too. 
  3. Whisk it all up!
  4. In a pan, melt some margarine over medium heat. 
  5. Soak the breads into the egg mixture and then place them into the pan. Flip them over when the surface starts to turn brownish a little. 
  6. Once the French toasts are ready, spread some (if you’re me, a lot) chocolate spread and then fold the toasts in half, creating a little sandwich. 

Et voila, now we no longer have to worry about our stomachs grumbling in the quiet lecture hall!
